Eau de Vie

Our Eau de Vie has been created by the gentle fermentation of Chardonnay and Pinot Noir grapes by wild yeast, barrel-aged as base wines for 6 months, then distilled in an artisan, copper still. Extracting only the purest 'hearts cut' from the distillation process, each bottle contains an essence of place, climate and grape. With zero additions, filtering or fining, it is as untouched by humans as can be.
