A mix of Bacchus and Seyval Blanc grapes (not certified organic) picked by hand. Crushed and destemmed. 60% bacchus, 40% Seyval Blanc both undergoing a 5-day maceration with skins before pressing and co-fermentation. Zero commercial yeast, sulphite additions, fining or filtration.
Best served from the fridge.
