c20 heritage apple varieties from our organic orchard were picked between August and October 2024, undergoing a rolling, wild yeast fermentation. Fermentation and elévage was undertaken in a single cherry wood barrel last used for making British rum by our friends at Cane Rat Distillery. Zero commercial yeast, sulphite additions, fining or filtration.
Best served chilled.
