Solaris was largely direct pressed, with a portion seeing 3-day skin contact, while Bacchus underwent 15 days of extended maceration to build depth, structure and colour. Fermented with wild yeast via pied de cuve, the wine was aged across a mix of steel and seasoned Burgundy and Bordeaux oak barrels, bringing texture and subtle spice. The final blend is led by Solaris (80%) with Bacchus (20%) adding grip and complexity. Zero commercial yeast, sulphite additions, fining or filtration.

Warm honey in colour, with peach and stone fruit aromatics layered with soft honeyed notes. The palate is golden and textured, with a smooth mouthfeel, low to medium acidity, and flavours of apricot and ripe peach. Lighter, lifted fruit from the Solaris is balanced by deeper, more structured tones from the macerated Bacchus, with gentle hints of vanilla and oak adding length and balance.

Best served lightly chilled.
