Organic Pinot Noir was left as whole bunches for 19 days soaked in CO2 gas, which stimulates an anaerobic fermentation from within the grape itself, producing flavours and aromas not released during conventional alcoholic fermentation. This full carbonic maceration Pinot Noir was aged in steel and then blended with Pinot Noir that underwent direct press and ageing in oak barrel. Zero commercial yeast, sulphite additions, fining or filtration.
Best served from the fridge.
